Roasted Garlic, Parsnip & Sweet Potato Soup

Well it seems winter is here, we woke up to a layer of snow today and had some chilly weather this weekend at the Santa Claus Parade. I brought my son, 2 nieces and my nephew to the parade, all bundled up in layers of clothing, blankets and sipping almond milk hot chocolate while we waited patiently for the big guy to arrive! I was thoroughly impressed with how well the 4 kids did with a half hour walk each way, sitting outside waiting for a while for it to start to secure our front row spots and watching the whole parade with excitement and awe at each float and character that walked by.

There is something so magical about seeing the complete wonder in children’s eyes when they see Santa and the joyfulness in their voices as they excitedly talk to each other about him!  I just love this season!

After a busy, chilly day I wanted something easy, nourishing and warm for dinner and for me that means a big bowl of comforting soup! While everyone played back at the house before my sister came to get her kids, I roasted the veggies then when dinner time came all I had to do was blend up the ingredients to puree the soup and heat it up.  This soup was perfect for the time of year and weather using grounding root veggies like parsnips and sweet potato and roasting them with garlic – LOVE the flavour roasted garlic gives dishes.

Roasted Garlic Parsnip & Sweet Potato Soup

1 large sweet potato, peeled, chopped

2 large parsnips, peeled, chopped

2-3 garlic cloves

4 cups veg broth

coconut oil

black pepper and Himalayan pink salt

few dashes of cinnamon

Preheat oven to 400 degrees. Lightly coat chopped sweet potatoes, parsnips and garlic in coconut oil and sprinkle on a little pink salt (not on the garlic cloves). Roast for about 30 minutes until you can pierce a fork easily through veggies. Remove garlic clove from papery skin and put in blender with roasted veggies and broth, blend until smooth or until desired texture. Warm soup up if needed on stove and stir in a few dashes of cinnamon and black pepper and pink salt to taste.
